There are 5 red grapes that are used in Bordeaux. Any or all can be used, depending on the village. The two most important grapes are Cabernet Sauvignon and Merlot. Bordeaux is shaped like a giant "U". Cabernet Sauvignon dominates in the Norhtwest. As you head south on the "U", the percentage of Merlot steadily increases. When you reach the southern part of Bordeaux and head northeast, the wines become almost entirely Merlot.
